Italian Pasta Salad recipe:

Flax Oil Pasta Salad -Easy, Fast + Delicious!

NOODLES:

6 oz (2 14 cups) brown-rice or wheat macaroni or rotini shells (your choice)
boil per package instructions, when noodles are done, drain and rinse with cold water and drain.

VEGETABLES:

While noodles boil, dice and chop vegetables into bite sized pieces.
-Your choice of 3 or more of these vegetables (or whatever you have available):
-Cauliflower
-Carrots
-Green/Red Sweet Pepper
-Snow Peas
-Zucchini
Some people like their veggies to be raw and others prefer them boiled until tender. If you prefer them boiled, then you can boil them separately (in order to be sure the noodles/veggies don’t get over or under cooked -this way you can monitor them easier).

4oz sliced Salami or your choice of meat (optional)

DRESSING:

1/3 cup Wine Vinegar
2 Tablespoons Olive Oil
3 Tablespoons Flax Oil
2 cloves Minced Garlic
1 Tablespoon chopped fresh Basil (or 2 teaspoons dried Basil)
1 teaspoon crushed fresh or dried Oregano
12 teaspoon Pepper
Dash of Sea Salt
1 small Onion diced into small pieces (optional)
1/3 cup sliced pitted Olives (optional)
Mix all ingredients together in a jar or just wisk with a fork, then drizzle over pasta and veggies and toss.
You may want to chill for a couple hours, but it is not necessary.

TOPPING:

2 small Tomatoes -chopped small or in wedges
2 Tablespoons finely shredded Parmesan Cheese (optional)
